Nankhatai Recipe

Nankhatai is an Indian Cookies everyone enjoy this at tea time. Nankhatai Recipe a classic traditional Indian biscuit made during Diwali festival! Soft, crumbly, and delicious are these cute Nankhatai Biscuit.

Preparation time: 15 min.
Cook time: 25 min.
Total time: 40 min.

Ingredients Required:

1. One and half cup maida
2. One – fourth cup besan
3. Two tblsp dahi
4. One – fourth tsp baking soda
5. Half cup ghee or butter
6. Three – fourth cup powdered sugar
7. One – fourth tsp nutmeg powder
8. One – fourth cardamom powder
9. Few sliced almonds for garnishing
10. One to two tsp milk or water for kneading if required

Instructions:

1. Cream the ghee and powdered sugar with hand held blender or in a food processor, the mixture should become smooth, light and creamy.
2. Add the dry ingredients – maida or all purpose flour, besan, cardamom powder, nutmeg powder and baking soda.
3. Mix well and add yoghurt, gently knead to smooth dough.
4.  Add water or milk if require to knead dough if it is dry.
5. Pinch medium size ball from dough roll them in plam make and oval and garnish with almonds.
6. Place in a baking tray.
7. Keep some space between them because they expand when baked.
8. Bake the nankhatai in a preheated oven at 200 degrees C for 20-25 mins till it become light golden.
9. Remove and place them on wire racks.
10. When cooled, store the nankhatai in an air tight container.

                                   Serve Indian Cookies Crispy Nankhatai with Tea.
