Amritsari Chole Bhature Recipe

Chole bhature is one of the famous street food across the India. No one makes chole the way Punjabis make it. My favorite dish Amritsari Chole Bhature Recipe from Punjabi Cuisines!

Ingredients Required:


For Chole:


1. One and Half cups chickpeas
2. Two medium size onions finely chopped
3. Three medium size tomatoes
4. One tsp ginger paste
5. Half tsp garam masala
6. One tsp Kashmiri chili powder if it is hot then use ¼ to ½ 
7. One tsp amchur powder
8. Two green chilies
9. Two – three tblsp oil
10. Salt as required


Spices for Chole masala:


1. Four – five black cardamom
2. One inch cinnamon
3. Five – six peppercorns
4. Three cloves
5. One bay leaf
6. One and half tsp cumin seeds
7. One and half tsp coriander seeds
8. One and half tsp fennel seeds
9. Two dry red chilies

Instructions:

1. Wash and soak the chole in enough water overnight, add enough amount of water because chole increase in size after soaking.
2. In a pressure cooker add chole, enough water, salt and pressure cook it 5-6 whistles. The chole should be soft when you mash with spoon.
3. In a pan, dry roast all spices mention above till brown, don’t burn them.
4. On a low flame you can roast the spices keep on tossing otherwise they will burn, when they become cool grind them all together.
5. In a same pan add oil when it became hot add chopped onions, fry till they become golden brown.
6. Add ginger paste cook until raw smell goes away and then add tomatoes add little salt so that tomatoes will cook fast.
7. Sauté tomatoes till oil separates.
8. Now add powdered spices that we have blended and garam masala, red chili powder and green chili to onion-ginger-tomato mixture, sauté for a minute.
9. Now add boil chole with little quantity of its stock, you can add more stock if you want more gravy.
10. Check the salt, simmer for 8-10 min on medium flame till gravy thickens and become little bit smooth.
11. Finally add amchur powder.
12. Serve Punjabi chole with kulchea, naan, bhature or it also taste good with rice.
