Ingredients Required:
1. One cup all-purpose flour
2. Two tblsp cornstarch
3. One tsp baking powder
4. Half tsp salt
5. One egg
6. One cup beer
7. Half cup plain yoghurt
8. Half cup mayonnaise
9. One lime, juiced
10. One jalapeno pepper, minced
11. One tsp minced capers
12. Half tsp dried oregano
13. Half tsp ground cumin
14. Half tsp dried dill weed
15. One tsp ground cayenne pepper
16. One quart oil for frying
17. One pound cod fillets, cut into 2 to 3 ounce portion
18. One package corn tortillas
19. Half medium head cabbage, finely shredded
Instructions:
To make beer batter:
1. In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, and then quickly stir into the flour mixture.
To make white sauce:
1. In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.
2. Heat oil in deep-fryer to 375 degrees F.
3. Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp. To serve, place fried fish in a tortilla, and top with shredded cabbage, and white sauce.
