Indian Cuisines - Sahi Malai Khofta Recipe

Indian Food Malai Kofta - malai means cream and kofta are fried dumpling balls. malai kofta recipe the koftas are made with potatoes and paneer. These melt in the mouth koftas are dunked in a creamy, sweet and mildly spiced curry.

Ingredients Required:


For Kofta:


1. Grated paneer – 100 gm.
2. Two medium size potatoes boil, peeled and grated
3. One – fourth tsp red chilli powder
4. One tbsp. corn flour 
5. A pinch of garam masala
6. Khoya- ¾ tblsp
7. Salt as required


For The Gravy


1. Half cup onion paste
2. One cup tomatoe puree
3. One – fourth cup cashew paste
4. Red chili powder- ¾ tsp
5. One tsp ginger – garlic paste
6. Two cup water
7. One kasuri methi
8. Salt as required
9. Oil for deep frying


Spices:


1. One bay leaf
2. One inch cinnamon
3. One to two black cardamom
4. A pinch of mace
5.  Two to three cloves


For Garnishing: 


1. One tblsp grated paneer
2. One to two tblsp cream
3. A few chopped coriander leaves


Instructions:

1.  Mix all the ingredients listed under kofta except oil.
2. Make medium size balls and fry the kofta on medium flame until golden brown.
3. Remove extra oil from pan and keep about 1 to 1.5 tblsp oil in pan.
4.  Add all the spices and fry till oil become fragment.
5. First add onion paste and brown it then add ginger – garlic paste cook till its raw aroma goes away.
6. Add tomato puree and sauté for 2-3 min.
7. Add red chili powder, garam masala powder, turmeric powder and cashew paste.
8. Stir and saute until oil start leaving and the add water stir continuously.
9. Simmer till gravy begins to thicken keep on low flame for 11-12 min.
10.  At the end add kasuri methi and salt.
11. Add kofta and serve or you can add kofta later on while serving.
