Red Potato Salad Recipe

Red Potato Salad


Ingredients Required:

1. Three pounds unpeeled potatoes
2. Four eggs
3. Less than half tsp mayonnaise 
4. Two tblsp milk
5. Two tblsp distilled white vinegar
6. Half cup sliced green onions
7. Half tsp salt
8. One – fourth tsp ground black pepper
9. One cup sliced celery

Instructions:

1. Boil salted water in a pot. Add red potatoes, and cook until tender but still firm, about 15 minutes. Drain, cool and chop into 1 inch cubes. Place in a medium bowl.
2. Place egg in a medium saucepan, and cover with cold water. Bring water to boil and immediately remove from heat. Cover and let eggs stand for 10-12 min. Remove from hot water, cool, peel and dice.
3. In a small bowl, whisk together mayonnaise, milk, distilled white vinegar, green onions, salt and pepper. 
4. Pour the mixture over the potatoes, and mix together with the eggs and celery. Cover, and chill in the refrigerator approximately 2 hours before serving.
