Ingredients Required:

1. Three tblsp olive oil
2. Three tblsp chopped fresh basil 
3. One tblsp chopped majoram
4. One tsp salt
5. Olive oil cooking spray
6. One red bell pepper, cut vertically, stemmed and seeded
7. One small eggplant/ aubergine, cut into ½ inch thick rounds
8. One medium Zucchini, cut vertically 
9. Four plum tomatoes cut vertically
10. Four boneless, skinless chicken breast about 3 pounds
11. Half tsp freshly ground pepper
12. One tblsp red wine vinegar
13. One medium red onion, cut into ½ inch thick round

Instructions:

1. Preheat grill to medium – high
2. Combine oil, basil, marjoram and salt in a bowl and keep one tblsp herb mixture aside in another bowl.
3. Coat the bell pepper, eggplant, zucchini, tomatoes and onion with cooking spray and grilled the vegetables until soft. As vegetables cooked keep them aside in large bowl and cover with plastic wrap.
4. Now coat chicken with reserved herb mixture and grill until cooked through and become red.
5. Transfer the grilled vegetables to cutting board and cop them in 1 inch pieces.
6. Take all grilled chopped vegetables and chicken in bowl and toss with vinegar and remaining herb mixture.
7. Serve Grilled Chicken with Ratatouille.
