A traditional Punjabi dish made up of mustard leaves and spices known as Sarson Ka Saag which serves with makki ki roti. It is a winter season dish usualy made in Punjab with homemade butter and makki ki roti. Sarson Ka Saag also known as Mustard Greens. It is made by mixing other greens in it like spinach, bathua, radish and frenugreek.
Preparation time: 2 hours.
Cook time: 2 hours.
Total time: 4 hours.
Ingredients Required:
1. One bunch Sarson leaves
2. Half bunch bathua leaves
3. Half bunch palak leaves
4. One cup chopped tender radish leaves
5. Two to three inches white raddish root
6. One cup methi leaves
7. Two medium size onion, chopped
8. Three medium size tomatoes, chopped
9. Two inch, ginger
10. Two green chilies, chopped
11. Seven to eight garlic, chopped
12. Half tsp red chili powder
13. A pinch of asafoetida/ hing
14. Two to three cup water
15. Two tblsp maize flour
16. Salt as required
Instructions:
1. Firstly, clean and chopped all greens, wash the greens well.
2. In a pressure cooker add all ingredients chopped finely except maize flour.
3. Pressure cooks it all for 7-8 minutes or more.
4. Pour the greens along with stock and maize flour in blender.
5. Blend it till become smooth.
6. In a skillet add puree of greens and let it simmer for 25-30 minutes.
7. In another small pan add oil or ghee.
8. Add chopped onion fry till become light brown.
9. Add the prepared Saag stir and simmer for minutes.
10. Stir occasionally.
11. Serve Sarson Ka Saag hot topped with makan with chopped onion, green chilies and makki ki roti.
