Greek Pasta Salad Recipe

Greek Cuisines - Tangy feta and crunchy veggies get extra body from rotini in this classic Greek-inspired pasta salad. This salad is easy to make and tastes fantastic.

Greek Pasta Salad 


Ingredients Required: 

1. Two cups penne pasta
2. One – fourth cup red wine vinegar
3. One tblsp lemon juice
4. Two cloves garlic, crushed
5. Two tsp dried oregano
6. Salt and pepper according to taste
7. Two – third cup extra virgin olive oil
8. Ten cherry tomatoes, halved 
9. One small red onion chopped
10. One small bell pepper chopped 
11. One red bell pepper chopped
12. Half cucumber, sliced
13. Half cup sliced black olives
14. Half cup crumbled feta cheese

Instructions:

1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.
2. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes.
3. Rinse with cold water and drain well in a colander set in the sink.
4. Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. 
5. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving
