Ingredients Required: 

1. Rice noodles – 125gm.
2. Three tblsp lime juice
3. Half tsp cayenne pepper
4. Two tsp light muscovado sugar
5. Two tblsp fish sauce
6. Two tblsp vegetable oil
7.  Cooked and peeled tiger prawns – 200gm.
8. Four spring onion, sliced
9. Beansprouts – 140gm.
10. Salted peanuts – 25gm.
11. A small handful of coriander leaves
12. One or two, cut into wedges
13. Sweet chilli Sauce

Instructions:

1. Put the noodles in a large bowl, pour boiling water in and leave them for 4 min, then drain and refresh under cold running water.
2. Put the lime juice, Cayenne, Sugar and fish sauce in a bowl and mix well. Get all other ingredients ready.
3. Heat the oil in a skillet and fry the prawn until warmed through. Add spring oil and noodles and toss around. Tip in the lime juice mixture, and then stir in the beansprouts and half the peanut and coriander. Cook for 1 minute.
4. Pile into a large dish, scatter with rest peanuts and coriander.

        Your Thai Cuisine Pad Thai is ready to serve lime wedges and sweet chilli sauce.
