Ingredients Required:
1. Eight cups chicken broth
2. Half cup fresh lemon juice
3. Half cup shredded carrots
4. Half cup chopped onion
5. Half cup chopped celery
6. Six tblsp chicken soup base
7. One – fourth ground white pepper
8. One – fourth cup margarine
9. One – fourth cup all-purpose flour
10. One cup cooked white rice
11. One cup diced cooked chicken meat
12. Sixteen slices lemon
13. Eight egg yolks
Instructions:
1. In a large pot, combine chicken broth, lemon juice, carrots, onions, celery, soup base and white pepper bring to boil and let it simmer for 20 min.
2. Blend the butter and flour together. Then gradually add it to the soup mixture. Simmer for 10 min more, stirring frequently.
3. Meanwhile beat the eggs yolks until light in color. Gradually add some of the hot soup to the egg yolks, stirring constantly.
4. Return the egg mixture to the soup pot and heat through. Add the rice and chicken. Ladle hot soup into bowls and garnish with lemon slices.
