Chicken Tacos with Charred Tomatoes Recipe

Ingredients Required:

1. Two plum Tomatoes, cored
2. Eight ounce skinless boneless chicken
3. One – fourth tsp salt
4. One – eighth tsp freshly ground pepper 
5. Two tsp canola oil, divided
6. Half cup finely chopped white onion
7. One clove garlic, minced
8. One small jalapeno pepper, seeded and minced
9. Two tsp lime juice, plus wedges for garnish 
10. Two tsp fresh chopped cilantro 
11. Two scallions, chopped
12. Six small corn tortillas, heated

Instructions

1. Heat medium skillet over high heat until very hot. Add tomatoes and cook, turning occasionally with tongs, until charred on all sides, 8 to 10 min. cut the tomatoes half crosswise, squeeze to discard seeds. Remove corers and chopped the remaining pulp and skin.
2. Cut chicken into 1-inch chunks, sprinkle with salt and pepper. Add one tsp oil to the pan and heat over high heat until very hot. Add chicken and cook, stirring occasionally until it is browned and no longer pink in the middle 3 to 5 min.
3. Reduce the heat to medium and add the remaining one tsp oil. Add onion cook until get soften about 2 min. Add garlic and jalapeno and cook stirring until fragrant about 30 sec. Add lime juice, the chicken and tomatoes.
4. Cook, stirring until heated through, 1 to 2 min. stir in cilantro and scallions. Divide the chicken mixture among trotillas.
