Curried Coconut Chicken Recipe

Ingredients Required:

1. Two pounds boneless skinless chicken breasts cut into half chunks 
2. One tsp salt and pepper 
3. Vegetable oil – 11/2 tblsp oil
4. Two tblsp curry powder
5. Half onion, thinly sliced
6. Two cloves garlic, crushed
7. One Can coconut milk
8. One can stewed diced tomatoes
9. One can tomato sauce
10. Three tblsp sugar

Instructions:

1. Season chicken piece s with salt and pepper.
2. Heat oil and curry powder in a large skillet over medium high heat for two minutes. Stir in onion, garlic and cook for 1 minute. 
3. Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium and cook for 7-10 minutes, until chicken is no longer pink in the center and juices run clear.
4. Pour coconut milk, tomatoes, tomato sauce and sugar into pan, and stir to combine.
5. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes.
