A Healthy American inspired side dish of sweetcorn and broad beans flavored with red chili, basil, mint and garlic. This is fabulous with fresh summer veggies, frozen or canned can be used.

Total time: 30 min.
Ingredients Required:
1. Four sweet corns cobs
2. One tblsp olive oil
3. Two garlic clove, crushed
4. Frozen baby broad beans 100g
5. One red chili chopped
6. Large handful basil chopped
7. Large handful mint, chopped
8. One – two tsp sherry vinegar
Instructions:
1. Use Knife and cut down the length of the sweetcorn to remove the kernels.
2. Heat the oil in a large pan cook kernels and garlic over medium heat for 5 min.
3. Add frozen beans to the pan, cover and cook, stirring for another 4-5 min or until beans are cooked through.
4. Turns off heat and the add chili herbs and vinegar.
5. Taste and add seasoning you like.
Your American Recipe Succotash is ready to serve.
