Ingredients Required: 

1. Short – grain or sushi rice, rinsed – 200gm
2. Panko breadcrumbs – 100gm
3. One tsp turmeric
4. One tblsp Vegetable oil
5. One egg white
6. Pork fillets – 450gm, trimmed and cut into 8 piece
7. Coriander springs to garnish
8. Pickled ginger to serve 
For the Sauce:
1. One tblsp vegetable oil
2. One onion chopped
3. One medium carrot
4.Two apples, brae burn, peeled, cored and roughly chopped
5. Two fat garlic clove
6. Two tsp medium curry powder
7. Half tsp ground ginger
8. One tblsp tomato puree
9. Twp tsp clear honey
10. One tbsp. soya sauce
11. One tblsp corn flour
12. Chicken stock – 350 ml
13. One tsp sesame oil

Instructions:

1. For the sauce Heat the oil in a large pan and add onion, carrot and apples.
2. Cover and cook gently for 10 min gently for 10 min until softened, stirring for couple of times.
3. Uncover pan, keep flame on high, add garlic and cook for 1 min.
4. Stir in curry powder and ginger. Cook for 1 min more, and then stir in the tomato puree, honey, soy and corn flour. 
5.  Gradually stir in the stock and simmer for 5 minutes until the vegetable are totally soft and the sauce has thickened.
6. Blend it, and then season to taste with sesame oil, salt and pepper.
7. While the sauce is cooking, put the pork between 2 sheets of cling film with a rolling pin until meat is about 1 cm thick, in a shallow; rub together the crumbs, turmeric and oil with some seasoning. Beat the white egg with a fork until little frothy and have a non – stick baking tray ready.
8. Put the rice in a saucepan with 400 ml cold water and pinch of salt. Simmer it for 10 minutes. Take off heat and set aside until ready to serve the pork.
9. Heat oven to 200 degree C. Dip each piece of pork into the egg, then the crumbs, pressing them to the surface before transferring them to the meat tray bake the pork for 10-15 mins until golden and crispy.

        Serve Delicious Japanese Cuisine with rice and katsu sauce, garnished with coriander plus pickled ginger if required.
