1. One tblsp vegetable oil
2. Two tblsp grated fresh ginger
3. One stalk lemon grass minced
4. Two tsp red curry paste
5. Four cups chicken broth
6. Three tblsp fish sauce
7. One tblsp light brown sugar
8. Three cans coconut milk
9. Half pound fresh shiitake mushroom, sliced
10. One pound medium shrimp peeled, de veined
11. Two tblsp fresh lime juice
12. Salt to taste
13. One – fourth cup fresh cilantro
Instructions:
1. Heat the oil in a large skillet on medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute.
2. Slowly pour the chicken broth over the mixture, stirring continually. Stir in the fish sauce and brown sugar; simmer for 15 minutes.
3. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Add the shrimp; cook until no longer translucent about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.
