Delicious Bengali Dum Aloo Recipe

Get an easy way to prepare Dum Aloo with flavors of Bengal. Dum aloo is traditional Bengali breakfast or made on special occasions. Bengalis generally call it as Niramish Alurr Dom.

Ingredients Required:

Main Ingredients:


1. Five – six Potatoes or Ten – Twelve baby potatoes
2. Three – four mustard oil
3. One bay leaf
4. Half tsp Kashmiri red chili powder
5. Half tsp coriander powder
6. Half tsp cumin powder
7. Half tsp turmeric powder
8. One cup water
9. Half tsp sugar
10. Salt as required

For Semi Fine Paste:


1. Two medium onions
2. Half inch ginger
3. Two – three garlic cloves

Semi Puree:


1. One large tomato – approx. one cup tomato puree

Powder or Grind –


1. Two inch cinnamon
2. Three – four cloves

Instructions:

1. Rinse the potatoes very well and parboil potatoes in a steamer or pressure cooker.
2. Meanwhile you just grind the onion, ginger and garlic in the grinder make it as semi paste, don’t add water to it.
3. Finely chop the tomatoes or make a puree of tomatoes.
4. Grind the clove and cinnamon in a dry grinder or coffee grinder to a fine powder.
5. Once the potatoes are parboiled let them cool then remove the peel and diced them or for baby potatoes you can just peel them.
6. Sprinkle one – fourth haldi/ turmeric powder on potatoes and mix well.  
7. Heat mustard oil in a pan fry the potatoes till light golden drain and keep aside.
8. In a same oil fry bay leaf with fragrant for few seconds and then add ginger garlic paste. Sauté it till oil starts to leave the mixture and become light brown.
9. Add tomato puree and remaining one – fourth of turmeric powder, cumin powder and red chili powder, coriander powder, salt and sugar. And sauté till it begins to leave onion tomato masala paste.  
10. Now add the potatoes and mix the masala well till it coats the potatoes.
11.  Add one cup water along with ground cinnamon and clove powder. You can also add the garam masala powder instead of cinnamon and clove powder. If you are adding garam masala then add it later on when whole dish is ready.
12. Simmer the duma loo it water almost dry.
