Ingredients Required:
1. One pound thin boneless pork chops, fat trimmed
2. Eight ounce wide Thai rice noodles
3. One cup fresh cilantro
4. One lime finely grated zest and juice
5. Two slices peeled ginger
6. Two cloves garlic smashed
7. Three red jalapeno peppers
8. Two shallots, roughly chopped
9. Three tblsp fish sauce
10. Two tblsp packed light brown sugar
11. Four tblsp peanut oil
12. Green Beans – ¼ pound split lengthwise
Instructions:
1. Place the pork in the freezer about 10 min to make it easier to slice. Soak the noodles in a very hot water until just tender, about 10 minutes and drain. Snip the noodles with scissors into shorter lengths. Cut the frozen pork crosswise into ¼ inch wide spread.
2. Puree the cilantro, lime zest and juice, ginger, garlic, jalapenos, shallots, fish sauce, brown sugar and one tblsp water in a food processor until smooth scraping down processor as needed.
3. Heat three tblsp peanut oil in a large skillet over a high heat. Add half the cilantro mixture stir fry one minute. Add the pork and stir fry until no longer pink 2 to 3 minute. Transfer the pork with a slotted spoon to a plate. Add the remaining one tblsp peanut oil to the skillet; add the green beans and stir fry until tender for 4 to 5 minutes. Add the noodles, pork and 2 tblsp of the remaining cilantro mixture.
4. Toss until heated through, about 2 minutes. Stir in the remaining cilantro mixture to taste.
