Ingredients Required:
1. One tsp olive oil
2. Two cup sliced mushrooms
3. Two tblsp olive oil
4. Six pork loin chops
5. Two cloves garlic crushed
6. One cup chopped onions
7. One can diced Italian tomatoes, undrained
8. One tsp dried basil
9. Half tsp dried oregano
10. Half tsp salt
11. One – fourth tsp ground black pepper
12. Half cup water if necessary
13. One large green bell pepper, cut into 6 pieces
Instructions:
1. Heat one tsp olive oil in a skillet over medium heat. Stir in the mushrooms, cook and stir until mushrooms are tender, 5 to 7 minutes, transfer the mushroom to a bowl and keep aside.
2. Now heat the two tblsp olive oil in the skillet over medium heat now just add the pork chops, browning both the sides for 7 to 10 minutes. Places the pork chops on the plate, then drain all but one tblsp of drippings for skillet. Stir in the garlic and onion, cook and stir onion are soft and tender for about 5 minutes.
3. Pour in the tomatoes, the season with basil and oregano, salt and pepper. Transfer the pork chops back to the skillet; cover and simmer until the pork chops are tender and no longer pink in the center, about 45 minutes.
4. Stir in the some water if the mixture is too dry. Place the bell pepper on the top of the pork, and then add the reserved mushrooms. Continue to simmer until the bell pepper is tender, 5 to 10 minutes.
