Sambhar Recipe

Sambhar is one of the South Indian Dish that needs no Introduction and probably the most versatile of them all. They make Sambhar even more than once in a day for breakfast later for lunch and dinner. Made up of toovar daal and full of vegetables that is nutritious and good for our health.

Preparation time: 15 min.
Cook time: 20 min.
Total time: 35 min.

Ingredients Required:

1. Three – fourth cup toovar daal
2. Half cup bottle gourd cubes
3. Two tblsp oil
4. One tsp mustard seeds
5. Six to seven curry leaves
6. Two pinches of asafoetida
7. Half cup chopped Tomatoes
8. Eight small shallots
9. Half tblsp tamarind pulp
10. Three tblsp sambhar masala
11. Two tsp chill powder
12. Turmeric powder pinch
13. Two tblsp finely chopped coriander
14. Tow – three small carrots cut into small pieces

Instructions:

1. Rinse toovar daal thoroughly and drain, now combine toovar dal and 2 cups of water in a cooker and pressure cook it 3 whistles.
2. Allow the steam to escape before open the lid.
3. Now blend the daal using a hand blender till it is smooth and keep aside. 
4. Combine bottle gourd and carrot with one cup of water in a deep non – stick pan and cook on the medium flame for 4 to 5 minutes or till vegetables are soft.
5. Heat the oil in a deep non Рstick pan add mustard seeds, curry leaves and asafoetida and saut̩ on medium flame for few seconds.
6. Add the tomatoes, mix well and cook on a medium flame for 1 to 2 minutes while stirring occasionally.
7. Add cooked bottle gourd and carrots, shallots, tamarind pulp, cooked daal, salt, sambhar masala, chilli powder, turmeric powder and ¾ cup of water and mix it well bring to boil allow to cok on the medium flame for 2-3 min. while stirring occasionally.
8. Add coriander mix well and cook on a medium flame for more 2 minutes. 

Your South Indian Recipe Sambhar ready to serve with idly, dosa, Vada etc.
