Crispy Italian Rice Ball Recipe

Preparation time: 45 mins.

Total time: 2 hours.

Ingredients Required:

1. Two eggs
2. One – third cup grated parmesan cheese
3. One tblsp dried parsley
4. One – fourth tsp freshly ground black pepper
5. One tsp salt
6. One quart water
7. One cup uncooked rice
8. Dried bread crumbs 11/2 cups
9. Two cups olive oil

Instructions:

1. In a medium bowl, whisk together eggs, cheese, parsley, pepper and one tsp salt. Cover and keep it in refrigerator.
2. Pour water and one tsp salt into a large saucepan and bring to boil. Stir in rice and reduce heat to low. Cook rice until water is almost absorbed, stirring frequently. Remove from heat and slowly pour egg mixture into it stir rapidly and prevent egg from scrambling. Allow rice mixture to cool for an hour.
3. Pour bread crumb into a pile on one end of cutting board. Dampen hands and roll rice mixture into one inch ball and cover each with bread crumbs.
4. In a deep skillet, heat olive oil to 350 degree F. Fry rice balls, turning as needed to ensure even browning. Drain on paper towels and warm.
