Soft and Spongy Khaman Dhokla Recipe

Khaman Dhokla, one of the famous snack in the street of Gujarat, it is no longer restricted to that reason only but it is available in every part of the country. People just love these yummy dhokla as snack, breakfast or make this part of their lunch and dinner menu. By this easy recipe you can prepare soft and spongy instant dhokla in less than 15 minutes. 


Khaman Dhokla 


Preparation time: 4 mins.
Cook time: 6 mins.
Total time: 10 mins.

Ingredients Required:


For the Dhokla Batter:


1. Two cups chickpea flour (besan)
2.  Half tsp turmeric powder
3. One – fourth tsp asafoetida
4. One ginger green chili paste
5. One tsp lemon juice
6. Three – fourth tsp baking soda or one tsp fruit salt


For the Tempering:


1. One tblsp oil
2. One tsp mustard seeds
3. One tsp cumin seeds
4. One or two tsp sugar
5. One tsp lemon juice
6. Half cup water
7. One spring curry leaves
8. Half tblsp sesame seeds


For Garnish:


1. One - fourth cup chopped coriander leaves

Instructions:


Making of Batter:


1. In a bowl mix all the ingredients mentioned above in dhokla batter except fruit salt.
2. Now add fruit salt and mix it gently in batter.
3. The batter will rise.


Steaming Dhokla in a Pan:


1. Grease small pan with oil, take another pan which could be fit on pan that you have been greased.
2. Add water in a larger pan and bring it to boil.
3. Prepare the batter as given above and add it to the greased small pan.
4. Keep it in large pan containing boiling water; cover the large pan with a lid.
5.  Steam 10 -12 minutes till the khaman dhokla is done. 


Preparing the Tempering:


1. Heat oil add mustard seed and let it pop, once they start pop up, add cumin seeds.
2. Fry for a minute then add rest of the ingredients for tempering except water. 
3. Again fry everything for a minute and then add water once it comes to boil, immediately pour it to steamed dhokla. 
4. Now you can garnish it with coriander leaves and green chilies.  

Your Indian Cuisine Khaman Dhokla is ready to serve with mint or coriander chutney.
