Ingredients Required:

1. Pot double cream – 568 ml
2. Green & Black’s white chocolate, broken into pieces
3. One vanilla pod, split or one tsp vanilla extract
4. Six egg yolks
5. Two tblsp golden caster sugar, plus extra topping

Instructions:

1. In a pan heat cream, Chocolate and vanilla pod until the chocolate melts. Then remove it from heat and allow infusing for 10 minutes. Heat oven to 160 degree C. 
2. Beat yolks and sugar until pale, stir in the chocolate cream. Strain into a jug and pour into ramekins. Place in a deep roasting tray and pour boiling water halfway up the sides. Bake for 15-20 min until just set with a wobbly center. Chill in the refrigerator for at least for 4 hours.
3. Sprinkle some sugar on top of the brulees and caramelize with a blowtorch or briefly under a hot grill leave caramel to harden, then serve.
