Punjabi Baingan Bharta (Eggplant Curry) Recipe

Baingan Bharta Recipe is one of the simple Punjabi recipes without use of many masalas and spices. Everyone just love the smoky aroma of baingan comes out very distinctly in the simple recipe.

Preparation time: 20 min.

Total time: 30 min.

Ingredients Required:

1. One large bhartha / baingan 
2. One medium onion, finely chopped
3. Five – six medium garlic clove, finely chopped 
4. One green chili chopped
5. One – fourth tsp red chili powder or as required
6. One – fourth tsp  garam masala
7. One to One and half tblsp oil
8. Chopped coriander leaves 
9. Salt as required

Instructions:

1. Rinse the baingan in water, dry it with kitchen paper apply some oil all over to eggplant and roast it on open flame remember to turn eggplant after very 2-3 minutes to that it can cook evenly. You can also roast it in oven but after that you will not get its smoky flavor.
2. Roast the eggplant completely cooked and tender. Remove the baingan and immerse in a bowl of water till it cool down. 
3. Peel the skin from roasted smoky eggplant.
4. You can mash the eggplant or chop it on plate.
5. In a skillet heat oil and then add finely chopped ginger and garlic.
6. Sauté the onion till they become pinkish and then add chopped green chilies.
7. Add chopped tomatoes and mix it well, Sauté tomatoes it oil separate from mixture. 
8. Now add red chili powder and mix well. 
9. Add the chopped cooked baingan in it then stir and mix well all the tomato – onion mixture with cooked eggplant.
10. Season the salt, stir and sauté for some more minutes.
11. Finally stir the coriander leaves and garam masla cook for 1 minute. 

Your Indian Cuisine Baingan Bharta (Eggplant Curry) is ready to serve with chapatis or it also goes well with jeera rice.
