Chill Tortellini Salad Recipe

Get an easy way to prepare Italian Salad Tortellini made of pasta, pepperoni and mozzarella cheese filled in this pasta salad. It’s a perfect cold pasta salad to enjoy on a warm day.

Ingredients Required:

1. One package refrigerated cheese tortellini.
2. Four ounces sliced pepperoni
3. Two green onion sliced
4. One can sliced black olives
5. One jar marinated artichoke hearts, drained 
6. Six ounce mozzarella cheese, diced
7. One – third cup extra virgin olive oil
8. One – fourth tblsp balsamic vinegar
9. One tsp dried Italian herb seasoning
10. Salt and black pepper to taste

Instructions:

1. Boil tortellini and cook it according to package instructions, drain in colander set in the sink, and rinse with cold water.
2. In a salad bowl take tortellini, pepperoni, green onion, olives, artichoke hearts, and mozzarella cheese and mix well.
3. In another bowl whisk together the olive oil, balsamic vinegar, white vinegar, Italian seasoning and salt and pepper and pour it over salad ingredients.
4. Gently stir to combine, keep in refrigerator to chill for atleast 2 hours before serving.
